I recently bought a box of Galadhrim Knights and they came with what looks like extra pieces (sword, spear with a flag, and a bow with arrows).

Does this mean i get a choice what to put on who?

Two must have bows, one may have a banner and at least three must have swords. You can also put spare bows onto the models with sowrds to just have them as the archer knights ready for close combat. So, sort of, is the answer to your question, lol :P
